Introduction to Instapot Shredded Chicken Tacos
In today's fast-paced world, finding a quick yet delicious meal option can often feel like an overwhelming challenge. Enter the Instapot, a versatile kitchen appliance that has revolutionized meal preparation for many households. Among its myriad of uses, making shredded chicken tacos stands out as one of the easiest and most satisfying.
Recipe
2 Chicken Breasts
Neutral oil (I recommend grapeseed or avocado)
Salt & Pepper
1/2 yellow onion, diced
2 tbsp garlic, minced
1 tbsp chili powder
1 can diced tomatoes
1/4 cup fresh squeezed lime juice
TACO FILLINGS
Avocado
Lettuce
Sour Cream
Cheese (optional)
Lime Juice (optional)
Set the instapot to Saute.
Season the chicken on both sides, liberally, with salt and pepper,
Add 1-2 tbsp of neutral oil to the pot.
Sear the chicken on both sides
Remove the chicken and set it aside
Add 1-2 tbsp of oil to the pot. Add the onions, garlic, and chili powder to the pot. Cook the onions, and garlic until they are cooked through and fragrant. Season with salt and pepper to taste. (Always taste your onions before moving on, one of my tricks)
Add 1 can diced tomatoes to the pot, add 1/4 cup lime juice, season to taste with salt and pepper. Taste your sauce before moving on!
Add your chicken back into the pot. Seal the lid onto the pot and pressure cook on high for 8 minutes. When the timer is done, release the pressure.
Shred the chicken with a fork.
Serve the chicken on tortillas with taco fillings.
